Thai Chicken & Lettuce Wraps

This recipe was given to me by my friend, Tora. We had it for tonight’s dinner and it was very yummy. Best of all, it’s gluten, dairy & egg-free!

Ingredients:

  • Chicken (breast or thigh meat; cut into bite-size pieces)
  • Green-leaf lettuce (don’t use Iceberg)
  • Bean Sprouts
  • Carrot, grated or finely chopped
  • 1/2 lime, chopped into small bits (you can keep the rind on, if you want to be more traditional)
  • Unsweetened coconut, shredded
  • Unsalted peanuts or almonds, chopped)
  • Fresh ginger, finely chopped
  • Plum sauce

Directions:

  • Fry chicken to taste in sesame oil and with fresh garlic
  • Place chicken pieces on lettuce leaf
  • Top with sprouts, carrot, lime pieces, coconut, nuts, ginger and a dollop of jam
  • Wrap all together like a tortilla
  • Eat with your fingers
