Anita's Prize-Winning Chili

This chili recipe won in a cook-off while stationed in California when I was in the Air Force.  Since that time I’ve substituted ground bison for the ground beef due to my allergy.

Ingredients:

• 1 lb. coarse ground bison
• 1 onion, chopped
• 1 green bell pepper, chopped
• 1 red bell pepper, chopped
• 1 jalapeno, chopped
• 1 Anaheim pepper, chopper
• 1 32-oz. can tomato sauce
• 2-3 cans chili beans
• 1 pkg. “Brown Bag Chili Seasoning”
• 1 bottle cheap beer (pale ale or other non-hops beer…hops makes things bitter when cooked)
• 1⁄2 cup cilantro, chopped

Directions:

Brown ground bison. Transfer to crock pot. Add all ingredients except cilantro. When adding the “Brown Bag Chili Seasoning,” discard the mesa flour. Allow to cook all day in the crock pot. Add the cilantro about 5 minutes before serving. Serve with chopped up onion and shredded cheddar cheese (or dairy-free substitute), if desired.
