This recipe was given to me by my friend, Tora. We had it for tonight’s dinner and it was very yummy. Best of all, it’s gluten, dairy & egg-free!
Ingredients:
- Chicken (breast or thigh meat; cut into bite-size pieces)
- Green-leaf lettuce (don’t use Iceberg)
- Bean Sprouts
- Carrot, grated or finely chopped
- 1/2 lime, chopped into small bits (you can keep the rind on, if you want to be more traditional)
- Unsweetened coconut, shredded
- Unsalted peanuts or almonds, chopped)
- Fresh ginger, finely chopped
- Plum sauce
Directions:
- Fry chicken to taste in sesame oil and with fresh garlic
- Place chicken pieces on lettuce leaf
- Top with sprouts, carrot, lime pieces, coconut, nuts, ginger and a dollop of jam
- Wrap all together like a tortilla
- Eat with your fingers
