I made this for dinner tonight since my husband wasn’t home and I didn’t need to worry about gluten. I went on instinct and it was really, really good!
- 1 pkg. gnocchi (boxed or fresh from the refrigerated section)
- 3 chicken tenders, diced
- 1 tbsp. minced garlic
- 2 handfuls of fresh spinach
- salt & pepper
- olive oil
Cook gnocchi according to package directions; drain well. Heat 2 tbsp. olive oil in a large skillet. Add chicken; salt and pepper to taste. Cook until brown on both sides. Add garlic and continue to cook until garlic is fragrant. Add drained gnocchi and brown on both sides. Add spinach; cook and stir gently until spinach is wilted. Serve.
